Dalma (Odia Dal with Vegetables)

Ingredients:

  • Toor dal (pigeon pea lentils)

  • Pumpkin, brinjal, potato

  • Ginger, cumin, turmeric

  • Mustard seeds, dry red chili

Method:

  1. Boil dal with vegetables, turmeric, and salt.

  2. Prepare tempering with mustard, cumin, chili, and ginger.

  3. Mix tempering into dal.

  4. Serve hot with rice.

Pakhala Bhata (Fermented Rice)

Ingredients:

  • Cooked rice

  • Water

  • Curd (optional)

  • Salt

  • Onion, green chili

Method:

  1. Soak cooked rice in water overnight.

  2. Add salt and curd in the morning.

  3. Serve with onion, chili, and fried fish/papad.

Chhena Poda (Odia Sweet Dish)

Ingredients:

  • Chhena (paneer)

  • Sugar or jaggery

  • Cardamom

  • Semolina

Method:

  1. Mix chhena with sugar and cardamom.

  2. Bake until brown and caramelized.

  3. Cool and cut into pieces.

Santula (Odia Mixed Veg Curry)

Ingredients:

  • Mixed vegetables

  • Mustard paste

  • Garlic, cumin

Method:

  1. Boil vegetables lightly.

  2. Add mustard paste and spices.

  3. Cook for a few minutes.

  4. Serve with rice.
