Badi Chura (Odia Style)

Ingredients

  • 6–8 sun-dried badi (urad / biri badi)

  • 1 small onion, finely chopped

  • 1–2 green chillies, finely chopped

  • 1–2 cloves garlic, crushed

  • Salt to taste

  • 1–2 tsp mustard oil

  • Optional: chopped coriander / few drops of lemon

Method

  1. Roast the badi
    Dry roast on low flame till deep brown and aromatic
    (or roast directly on flame for smoky taste)

  2. Crush
    Cool slightly, then crush coarsely using hands or mortar
    (not powder—chunks are important)

  3. Mix
    Add onion, green chilli, garlic, salt.

  4. Finish
    Drizzle mustard oil and mix well.

  5. Rest
    Let it sit 2–3 minutes before eating.
