Oriya Styel Ambila And Mixed Sabzi

Odia Ambila (Mixed Vegetable Curry)

Ingredients

Vegetables (use what you have, 3–5 types):

  • Pumpkin

  • Drumstick

  • Raw banana

  • Brinjal

  • Ash gourd / papaya

Other

  • 1 tbsp ambula (sun-dried raw mango)
    (or tamarind water as substitute)

  • ½ tsp turmeric

  • Salt to taste

  • 2 cups water

Tempering

  • 1 tbsp mustard oil

  • 1 tsp black mustard seeds (rai)

  • 2 dry red chillies

  • A pinch hing (asafoetida)

Method

  1. Boil vegetables
    Add vegetables, turmeric, salt, and water to a pot.
    Cook till vegetables are soft but not mushy.

  2. Add souring agent
    Add ambula (or tamarind water).
    Simmer for 3–5 minutes.

  3. Prepare tempering
    Heat mustard oil till lightly smoking.
    Add mustard seeds → let splutter.
    Add dry red chillies + hing.

  4. Finish
    Pour tempering over the curry.
    Cover and rest for 5 minutes before serving.
