Dahi Bara Aloo Dum (Aloo Dub)
For Dahi Bara
Ingredients
1 cup urad dal (soaked 6–8 hrs)
1–2 tbsp water (for grinding)
Salt to taste
Oil for frying
Method
Grind dal to a thick, fluffy batter (no lumps).
Add salt, beat well to aerate.
Fry small baras in medium-hot oil till golden.
Soak baras in warm salted water for 10 minutes.
Gently squeeze and keep aside.
For Aloo Dum (Aloo Dub)
Ingredients
3–4 medium boiled potatoes, roughly mashed
2 tbsp mustard oil
1 tsp cumin seeds
1 tsp ginger paste
1 tsp red chilli powder
½ tsp turmeric
1 tsp coriander powder
Salt to taste
Water as needed
Chopped coriander
Method
Heat mustard oil till smoking lightly.
Add cumin seeds → ginger paste.
Add all dry spices + salt.
Add potatoes and mash lightly while cooking.
Add water to make a thick, flowy gravy.
Simmer 5–7 minutes. Finish with coriander.
For Dahi
1½ cups thick curd, whisked
Salt to taste
A pinch of roasted cumin powder
Red chilli powder (optional)
Assembly (The Best Part)
Place 2–3 soaked baras in a bowl.
Pour hot aloo dum over them.
Add generous whisked dahi.
Sprinkle chilli powder + roasted cumin.
Garnish with coriander (or sev if you’re feeling extra.
