Odia Dalma (Traditional Style)

Ingredients

Dal

  • ½ cup arhar dal (toor dal)

  • ¼ tsp turmeric

  • Salt to taste

  • 2½ cups water

Vegetables (mix 4–5)

  • Pumpkin

  • Raw banana

  • Drumstick

  • Brinjal

  • Papaya / ash gourd

Spice Mix

  • 1 tsp roasted cumin–dry red chilli powder

Tempering

  • 1 tbsp mustard oil

  • 1 tsp cumin seeds

  • 2 dry red chillies

  • A pinch hing (asafoetida)

Method

  1. Cook dal & vegetables
    Wash dal. Add dal, vegetables, turmeric, salt, and water.
    Pressure cook till dal and veggies are soft but not mushy.

  2. Add spice
    Open lid and add roasted cumin–chilli powder.
    Simmer 2–3 minutes.

  3. Prepare tempering
    Heat mustard oil till lightly smoking.
    Add cumin seeds → dry red chillies → hing.

  4. Finish
    Pour tempering over dalma.
    Cover and let it rest 5 minutes before serving.
